el objeto de la presente Memoria es estudiar,en el
síndrome de malabsorción causado por la resección del 50% de intestino delgado distal, los
efectos del consumo de leche de cabra, en comparación con la de vaca, la más comúnmente
consumida, sobre la utilización digestiva de grasa y parámetros bioquímicos relacionados con el
metabolismo lipídico (colesterol total, colesterol-HDL y triglicéridos) y hepático (transaminasas
GOT/ASAT y GPT/ALAT). Así mismo se estudia la utilización digestiva y metabólica de
hierro, cobre y cinc mediante la técnica de balance metabólico y la concentración de los mismos
a nivel de distintos órganos implicados en su regulación homeostática, con el fin de conocer
como la utilización nutritiva de estos minerales puede incidir en la distribución y destino metabólico de los mismo.
