Los probióticos se definen como microorganismos que,
administrados vivos por vía oral, a dosis adecuadas, bajo la
forma de suplemento dietético, afectan beneficiosamente la
salud del hospedador, proporcionando beneficios más allá de
los inherentes a la nutrición básica. La Organización Mundial
de Gastroenterología (OMGE) subraya que solo se deberían
considerar probióticos aquellos microorganismos cuyos
efectos beneficiosos han sido demostrados en estudios
controlados con seres humanos. Las investigaciones sobre
microorganismos probióticos constituyen un tema de
actualidad y de creciente interés. El estudio de lactobacilos
probióticos es una de las líneas de investigación del Grupo de
Inmunología Microbiana (BIO 201) de la Universidad de
Granada, en el que se ha realizado esta Tesis Doctoral, que
se diseñó con el objetivo general de caracterizar nuevas
cepas de lactobacilos cuyas propiedades biológicas y robustez
tecnológica les confieran un potencial prometedor como
candidatos a probióticos.
