La legislacion vigente establece que todos los moluscos destinados para venta y posterior consumo humano deben someterse a un tratamiento de depuracion con la finalidad de eliminar cualquier microorganismo o virus que ha podido adquirir mediante su mecanismo de alimentacion.El tratamiento de la depuracion tiene la importancia fundamental porque esto constituye una barrera contra la transmisión de las enfermedades bacteriales y virales de origen acuático. Nosotros analizamos las posibles diferencias entre los distintos parámetros de contaminación en los moluscos, las posibles alteraciones en la calidad, y los efectos potenciales de estas alteraciones sobre la salud humana.
