Se describe un método de aprovechamiento de los ácidos oleanólico y maslínico contenidos en los subproductos
resultantes de la molturación y procesado
de la aceituna o sus partes, ya sean procedentes de prensas, de tres fases o de dos fases. Este método de aprovechamiento conduce a la obtención, por separado
y con purezas mayores de 80%, de ambos ácidos, con unos rendimientos comprendidos entre el 0.2 y el 1.5%, dependiendo del producto y la materia prima procesada. Fundamentalmente consiste en extracciones selectivas y fraccionamiento de las
mezclas resultantes mediante disolventes.
