A partir de una serie de historias de vida de mujeres
migrantes empleadas de hogar, este texto se orienta a investigar el
potencial que tienen las emociones para el estudio de los procesos
migratorios. En concreto, se analizarán los registros emocionales
surgidos en las interacciones que se producen en el contexto del
trabajo en el servicio doméstico y para ello se empleará el modelo
de la teoría sociorrelacional de Kemper sobre la distribución de
poder-estatus. Este análisis permitirá observar que el ámbito del
empleo de hogar se configura como un entorno altamente jerarquizado
y generizado en el que las diferencias de poder y estatus entre
las empleadas de hogar y los empleadores se producen a través de
procesos de vulnerización, etnificación e inferiorización de las mujeres
migrantes. A modo de reflexión final, se señalará el potencial
que el estudio de las emociones ofrece para la comprensión de los
fenómenos migratorios en tanto que la dimensión emocional es un
componente esencial de los fenómenos sociales.; Based on a series of life histories of migrant women
working in the domestic service, this text aims to explore the potential
that emotions may have to study migratory processes. In
particular, we analyse the emotional records that emerged in the
interactions occurred in the context of the domestic service and to
do so we will use the model of Kemper’s sociorrelational theory on
the distribution of power-status. This analysis will allow us to observe
that the scope of household employment is configured as a
highly hierarchical and gendered environment in which differences
in power and status between domestic workers and employers occur
through processes that turn these migrant women into vulnerable,
ethnified and inferior. As a final reflection, we will point out
the potential that the study of emotions offers for the understanding
of migratory phenomena since the emotional dimension is an essential
component of social phenomena.

Sensory profiling and consumer acceptability of new dark cocoa bars containing Tuscan autochthonous food products

A new set of cocoa bars named Toscolata® were developed containing top-quality
extra virgin olive oil, dried apples cultivars, and chestnut flour. The present work has
been conducted to define the sensory profile of these products through tasting by
trained experts and consumers to study the acceptability, preference, and quality perception.
The four sensorial profiles of the bars differed in the level of persistence,
bitterness, aromaticity, acidity, astringency, and tastiness. In particular, the sour attribute
could be traced to the presence of dried apple. Bars containing apple and
chestnut flour obtained higher acceptance ratings, compared to those with extra virgin
olive oil. The bar with chestnut flour was preferred by consumers who considered it to
be sweeter due to the presence of natural sugars, which lowered the bitter sensation
of cocoa. These results showed that the selection of the preferred bar by consumers
was mainly based on the level of bitterness and, in particular, elderly consumers expressed
a strong preference for the sweetest product. As far as we know, this is the
first study comparing the results of a panel of expert tasters with that of consumers in
the tasting of dark chocolate.
