abstract = {En las páginas que siguen presentamos un detallado listado de empresas y empresarios que ejercían sus funciones en los sectores de la hostelería y el entretenimiento en las ocho provincias andaluzas en 1931. Las estadísticas que hemos reconstruido a partir del Anuario General de España y que en parte reproducimos aquí, así como los mapas que las resumen, ofrecen un detallado panorama de la infraestructura básica de lo que se estaba configurando como un prometedor sector hostelero ya antes de la República y de la guerra civil. 
Nuestro estudio pone en evidencia que dicho sector contaba ya a finales de los años Veinte con una amplia y diversificada infraestructura empresarial que estaba presente en la mayor parte de las comarcas del sur de España y especialmente desarrollada en algunas plazas concretas, las más importantes del territorio y, por supuesto, las ocho capitales de provincia. Así mismo describimos la notable variedad de actividades y de organismos titulares de las mismas, evidencia adicional de un desarrollo importante y diversificado que pronto se vio frustrado durante varias décadas.},
abstract = {In the following pages we present a detailed list of organisms and entrepreneurs who carried out their functions in the hospitality and entertainment industries throughout the eight Andalusia provinces in 1931. The statistics that we have rebuilt from the Anuario General de España, that we partially reproduce here, as well as the maps that summarize it, offer a detailed overview of the basic infrastructure of what was already, before the Republic and the civil war, a promising hospitality sector. 

Our study shows that in the late Twenties, this economic sector achieved a large and diversified business infrastructure that was present in almost all the counties of southern Spain and was especially developed and diversified in some specific places of the territory among them, of course, the eight provincial capitals. We also describe the remarkable variety of activities and holders working in the hospitality industry, an additional evidence of a significant and promising development which soon became frustrated for several decades.},
